Good Food in the Grand Cirlce Area?

I will be spending two weeks doing the grand circle (North rim Grand Canyon, Zion, Bryce, Capital Reef, Arches (Moab) Canyonland, Mesa Verde in Colorado back to Monument Valley and Hopi land... I am more than a little concerned about having little choice but steak and potatoes? Anyone know any jewels?
Someone here recommended the German Stone Oven in Dolores, CO. That's not too awfully far from Mesa Verde.
Another chowhound recommended the brisket at Cowboy's Smokehouse in Panguitch, UT. That's in the Bryce Canyon area.
Fat City Smokehouse is my favorite place in Moab, UT. Excellent ribs. Good pulled pork though I've only had a taste of it. Wasn't impressed with their hot sausage. Plenty of restaurants in Moab if you don't like BBQ. That town has really boomed in the past 10 years.
Zion. Just a negative comment about a popular Mexican restaurant in Springdale, The Bit and Spur. Totally bland.
The other areas you're going are very beautiful but rather desolate. I'll be interested to hear if *you* find any jewels.
