Ok, I know some people will disagree, but I love Louie's. I went last night with a friend, had a large pizza, and we ate all of it. They aren't stingy with the toppings either. The pepperoni were two layers thick. And god bless their sausage. Found out last night they make it themselves.

Don't let the look of the place deter you. They have damn good pizza!!

When I first moved to Dallas, everyone was raving about Louies. I really don't like it at all. The crust was tasteless and too crispy, like a cracker. Granted, I'm a pizza snob from NY, but there are much better options, I think. Fireside Pies is great, but the wait is too much to get in. Pastazio's on McKinney makes the most true-to-NY style pizza I've had in DFW. Also, surprisingly, Lovers Pizza on Garland & Buckner near the Arboretum has great pies.

Louies, however, has the hands down best Caesar salad I've ever had.

I don't know what my problem is with Fireside pies. Maybe I pick the wrong pizza. I just didn't love it there. When I go, I usually get salads.

I think your differing opinions just boil down to the style of pizza. Personally, I'd gladly eat Fireside's and Louie's; they're both better than most anything else out there. Pizza is one of the few foods, especially widely popupar foods, that you really can't make at home, and what most places do to it is a crying shame.

If you love pizza, and you ever visit Phoenix, try Pizzeria Bianco. It's my gold standard for 'za. The owner's from NYC, they make their own mozzarella, and use a big old wood-fired oven. Fireside's pies are similar, and I've had some great pies in NYC (my old stomping ground), but Bianco's my favorite.

But that's like going to Fogo de Chão and eating the salad!
Next time, just ask for a plain pie with maybe some roasted garlic and "hand-torn" basil. An optional drizzle of truffle oil and see what you think.

I'm a huge fan of neopolitan style pizza. The pizza I had in Naples was reason enough to go back; there was just something about the gestalt flavor from the combination of simple ingredients (I rarely ordered something other than the margherita) and well prepared dough and sauce. With the concession that during my backpacking I may have been in the Quixotic position that hunger was indeed the best sauce, I haven't found anything stateside that replicates that flavor memory. That being said, Fireside and Campania
in west village come closest (albeit still a considerable margin from what I remember). I will agree with the other posters that pizza preference is very subjective and fluctuates wildly, so take my insight with a pinch of parmesan (or red pepper flake if you prefer).
