What to serve with this menu?


I'm having my new SO over for his birthday and am serving this menu. I was hoping someone could give me a nice suggestion for some wine suggestions to go with this? I usually serve something white, dry and on the sparkling side.

Marinated Seaweed with Sweet Pepper,
Sesame Seed and Maple Syrup,
Rice Paper Wrap,
Stir fried Greens with Garlic and Ginger, with Mushrooms
Sitr fried Rice Noodles with Tofu, Vegetables and Turmeric
Eight Treasure Rice
Ma Po Tofu

    1. Sparkling wine would match with every dish above. For my palate, avoid prosecco with Asian flavors, go Cava, German, Cremant, or Champagne.

      1. Sake, soju, German Riesling, GrĂ¼ner Veltliner

        1. Italian Muller Thurgau might work.

          The mapo tofu seems to call for some hard alcohol. I'd be partial to a nice japanese sweet potato (imo) shochu.

          1. I know this is the wine board but that menu has beer written all over it.
