Butternut squash stuffed shells?

I am considering making butternut squash stuffed shells using Giada's recipe for butternut squash lasagna (basically butternut squash, amaretti cookies, parm and mozz). Any thoughts on if this filling would work in stuffed shells, and what adjustments, if any, I should make?

  1. Any filling like that will work in stuffed shells. I don't know whether it calls for it but make sure you add egg to the filling. That way it will keep it from running out of the shells when cooked.

      you may also want to add some good ricotta to the cheese mix.

        I second that. The ricotta will give that "lasagna" vibe.

    2. I would do ricotta, shredded mozzerella, and egg, with tons of sage.

        Do mean include that with the butternut squash, or just do "regular" stuffed shells, w/o the squash? Not sure what you mean.

          I guess I didn't read the OP correctly…I guess I would stuff the shells w/o the squash, and maybe puree the squash and pour over before baking, like a sauce. Or just cube it and add it to the stuffing. A little goat cheese somewhere would be nice too!

          I've tasted stuffed shells with that filling, with a butternut squash cream sauce over it. Delicious!
