Making this for a Hawaiian party and I can't find Salt Salmon--so I'm going to salt it myself. Anyone have any tips on how long? or any general ideas?

Thanks.

Here you go: If unsalted salmon is used, rub the salmon with sea salt or rock salt and let stand overnight,

A family member of mine on Maui makes lomi lomi salmon with smoked salmon instead of salted. It's wonderful.

I've only lived in Hawai'i since 2007, but Lomi Lomi salmon is the worst way of preparing salmon ever IMO. Could you go with tuna/ahi poke instead?

Lomi lomi is made with dried salted salmon. Perhaps substitute it with dried salted cod? The mix should be chopped onion, lots of chopped fresh tomatoes, and sprinkling of chopped cilantro. If you wish, you can add some lemon juice or sprinkle of sugar and chili sauce to the mix. Best eaten cold.

IMO using smoked salmon is a waste of money because it can be eaten by itself without all the mixes to mask the taste.

2-3T salt per pound of salmon, want the salmon to be 1 inch thick

            Check after 3 days
