Nothing new here. Tip pools have been around for ages.
In my mind, tips are a reward for service over and above, and I tip accordingly.
If a restaurant or any other business chooses to pay a given wage, include it your cost of doing business and do your pricing accordingly.
You would be amazed how many people have told me that I would go belly up when I suggested opening my own restaurant with a similar pay structure. Even right here on CH.
