  1. do home cooks over-use knives? i do think many of them have knives that aren't sufficiently sharp though.

    as for cooking oil, i'm not cooking for hundreds of people a night and will NOT eat seed oils of any kind. although it does mystify why so many tv cooking shows use evoo as a cooking oil.
