Iberico suggestions

We received as a gift a bone Iberico Bellota ham. I'm looking for suggestions on how to use it up. I know traditionally, you just slice off thin pieces and enjoy. But I can only eat so much that way.

    Crisp up thin slices in a hot oven. Sprinkle over greens such as string beans, roasted brussel sprouts/asparagus, soups and salads.
    Stuff pork or chicken with the ham, fontina and spinach. Really, you could do beef and lamb, too.
    Veal saltimbocca-type preparation with veal, pork or chicken cutlets.

      No need to eat it all in one sitting. It will keep for months at room temperature, just put a cloth over the cut edge. To me, it would be a waste of a beautiful ham to sully it in those cooked preps though that's what you've requested.
