Herring help, please!

We find ourselves in the UK this Christmas (and for many more!). Scandinavian pickled herring is a family favorite, and I could not find any around here to purchase. I got the idea to do it myself using salted herring and found a wonderful US supplier, but had difficulty here. I decided this was correct http://www.jollyfish.co.uk/product.ph... and it just arrived now. However, it seems pretty clearly smoked and salted to me. Can anyone tell me if there is anyway to have pickled herring using this? I can still get fresh herring, but that seemed like that would still have to be salted (for a couple of weeks) before it could be used to pickle. If anyone has any ideas, I would love to hear them. If not, I guess we have a lot of smoked herring to enjoy...

  1. Whereabouts in the UK are you?
    I've not found much trouble finding pickled herring but then I am in London.

      I'm in Cambridge. My MIL is picking up some in London to bring, so I think it will work out okay. I haven't found it at Tesco or Sainsbury here...
