Can someone help me recreate Turkey Wheatberry Salad from Panera

I brought three to work a few weeks ago and people went nuts. Now, I want to make it for a luncheon for 20 if I can get something close to it, esp the dressing.

  1. Try this for the dressing. I picked this up a few years ago off of a Food Network show...

    1/4 c. maple syrup (make sure it is real maple syrup)
    1/4 c balsamic vinegar
    1-1/2 cups extra virgin olive oil
    a finely chopped shallot or two
    2 Tbs Dijon mustard
    salt and pepper

    Mix together the vinegar, dijon, shallot. Whisk in the olive oil, add the maple syrup and season with salt and pepper.

    The salad at Panera is mixed spring greens, Romaine lettuce, Gorgonzola cheese, pistachios, wheatberries, and turkey slices.

    Need to cook the wheatberries before using.
