None of this would happen if people had access to fresh meats. A Francophile friend refuses to indulge in steak tartare here because he is unsure of where the meat came from, he has no qualms in France where he knows the butcher and knows that the meat sold to him for this dish is fresh and expertly handled.
Exactly! I would never use Super market chopped meat, no matter what the quality, since you have no idea about the cleanliness of the surroundings/the meat grinder. I buy it on occasion from my local butcher ( Swiss Pork Store in Fair Lawn NJ) and tell him that I will be eating it raw. Never had a problem!
