I travel often to the Rio Grande Valley area (McAllen, Hidalgo, Mission, San Juan, Edinburg, Donna, Weslaco, etc), but have not been able to find a place to have a good dinner. I like the fusion type cuisine but I am open to anything that tastes great (and I also try to avoid the huge chain franchise restaurants). Does anyone have any suggestions on where to go?

Not Fusion at all.
And you probably have your own favorite local cuisine.

But,
when I had family in the Roma area, we would frequent a chain of mobile kitchens eponymously named Cocina Mobil.

They made the best gorditas ever.
Nothing like sitting out at the picnic table with dust circling your legs on a cool Sunday morning after a night of overconsumption.
The appears a stack of little fatties. Hot with lardo beans and little crumbles of white cheese.

I'm hungry again.
Thanks.

There is a great chinese buffet(yes really) right off HWY 83 in Pharr on the northside. Can't ever remember the name.

Sauzas is very good mexican in Harlingen off Ed Carey drive north of hwy 83/77

I forgot to mention my favorite Seafood Place if you head out towards the Island.

White Sands is a little restraunt behind a motel on the north side of HWY 100 as you are driving through Port Isable on the way to S Padre.

there is also wonderful ice cream on the south side of 100 right before you get on the bridge to the island. Just look for the building that looks like an ice cream cone.

There is also a great Hamburger Joint/bakery in downtown Harlingen, Main Street grill southside of Jackson Street.

Victors tacos in Nuevo Progresso (full street of taco stands about three blks after you get off the bridge) is wonderful. I also ate at Arturos and wasnt too impressed.
