Potato Birds Nest

I just purchased a spiralizer and love it! Last night I made curly fries for the frist time, and realized I could form the potato "noodles" into birds nests. I was googling in an attempt to find some filling ideas, but the only thing I'm seeing is smoked salmon and creme fraiche! While I'm sure it's delish, I'm allergic to salmon. Anyone have any other filling suggestions?!

I think almost anything could be added:
    Cheddar, sour cream and bacon
    Horseradish cream and roast beef
    Tuna tartare
    Roasted sausage and grapes
    Meatballs
    Grilled octopus
    Brie and mushroom duxelles
    Caramelized onions and gruyere
Sautéed apples with sliced pork tenderloin
    Spinach and feta

For an elegant dinner party many years ago I filled the nests with fresh, buttered peas. But I'm guessing you're looking for something that's more of a main course. You can fill them with just about anything that's not too saucy, which would make the bottoms a bit soggy.

        Egg in various ways
        Creamed spinach
        Pulled pork
        A variation of shepherds/cottage pie

Many Chinese restaurants do a mixed seafood in birds nest. This could be adjusted or Westernized as ingredients are available: scallops, lump crab, crayfish, cod etc.
