This is the filling ingredients I use for both pecan and walnut pie. Growing up, my grandmother had a black walnut tree in her yard and walnut pie made with these is so delicious. But regular walnuts would work too.
5 tablespoons butter, melted and cooled
1 cup brown sugar
3/4 cup corn syrup **see note below
1/2 teaspoon kosher salt
1 teaspoon vanilla extract
3 large eggs, well beaten
1 teaspoon all purpose flour
2 cups roughly chopped walnuts
**If using maple syrup, use 3/4 cup instead of the corn syrup in the recipe. If using maple extract, use the corn syrup and add 1 1/2 teaspoons maple extract.
In a large mixing bowl, beat together all of the ingredients EXCEPT the walnuts until completely well blended. Stir in the walnuts and spoon mixture into a prepared pie crust. Place onto a baking sheet; bake pie in a preheated 350F. degree oven for 40-45 minutes or until center is set, covering edges of pie if you see they are becoming dark before pie is cooked. Set aside to cool.
