Will this pork loin recipe work?

Ok, I am planning on stuffing a pork loin with spinach,feta,garlic,and mozzarella. In the roasting pan I was going to add onions, potatoes and, quartered apples. Will these tastes go together or do I need to omit the apples?

    Hmmm... could work, not saying that it wouldn't. But, what about adding golden raisins to the stuffing? I think the sweet should be with the salty feta for that perfect "bite".
    I'd rethink the mozzarella though ;-)

      I'd probably omit the apple, though I do love apples, onions and potatoes roasted with pork. If you do decide to use them, please report back. I'm curious.

      Go easy on the mozzarella.

        I would omit the mozzarella but keep the apples or use pears instead.

          Just following up. Everyone loved the pork. It came out fantastic. The apples did work roasted in the pan. I would make this again in a heart beat.
