Looking for Tried and True Low Carb Baked Catfish Recipe

I need an easy baked catfish recipe that's low or no carb. One including walnuts or pecans is all the better (just because I have a bunch lying around). Cannot have ANY grains or grain products (so not even a tablespoon of flour, breadcrumbs, etc.). Has to be very flavorful and not require hard to find ingredients (although I can get basic East and South Asian ingredients like lemon grass, basil, coriander powder, cardamom, and so on, pretty easily).

I know there are plenty of recipes that meet this description on the Internet, but I'd love to have one with which one of you discerning Chowhounds has had good success already.

  1. Grind nuts in food processor with pepper. Coat fish. If you like buttermilk and can have it soak the fish in some before coating the fish.
    Bake on cookie sheet10 minutes per half inch of thickness at 325.
    Alternatively, dust with creole spice and bake dotted with butter.
