Rome Dittrambo

Does anyone know what sauce Dittrambo uses on their Pumpkin Gnocchi? It was heaven. Thinking about attempting to recreate this.

  1. I can't identify the sauce, but it definitely looks like they included sage, which would make sense. Also the cheese seems to be grated ricotta salata.

    1. are you sure it has a "sauce"? one of the common ways to serve gnocchi, ravioli etc, is to sizzle fresh sage in plenty of melted, possiblyslightly browed butter, fry the cooked gnocchi in it a bit, season with some salt and freshly ground pepper and sprinkle chosen cheese over to serve
