  1. Salt and pepper plus a little Cajun seasoning such as Tony's of Konriko put in a mixture or corn meal and flour is how I do it.

I butterfly, devein, leave the tail on. Season with S & P.Dip in beaten egg white then in a mixture of cornmeal & flour. Deep fry til golden brown.

That's the way I do it except I add a little milk to the egg, plus some Cajun seasoning. I use 10-15 or 16-20 depending on price, Gulf shrimp, fresh if making the drive to the Galveston Bay area or frozen from my Houston HEB grocer, there is really little difference in taste. I use 80/20 roughly flour to yellow corn meal, seasoned, but the ratio is a personal thing and vary to taste. I use the opposite 80/20 corn meal to flour for fish.

    2. I like garlic, lime, cilantro and red pepper.

      1. Salt and pepper for simplistic. Add of slices or dices of jalapeno if heat is desired.

        1. Brine them for ten minutes and fry on high heat. Makes them plump and crisp.

By crisp I mean slight crunch like you get in Chinese restaurants

          1. A lot of garlic!! I make something like this often- with or without the chili, and must have some good crusty bread nearby:
