Pumpkin Gnocchi for Thanksgiving - Recipe I can freeze

Fiona Nov 4, 2013 07:18 PM

I have a beautiful pumpkin that is reported to be the preferred type for making gnocchi. I would like to make pumpkin gnocchi for Thanksgiving but I want to make it ahead of time and freeze it. Will boiled gnocchi freeze well for subsequent sauteing in sage butter on THE day? Also, does anyone have a favorite (as in fool proof) recipe they would like to share?
Thanks in advance

Supermarkets sell frozen gnocchi that you boil straight from the freezer. Suggest you freeze yours unboiled. Pre-cooked dumpling-type doughs can fall apart when reheated.

Thanks for the tip! I would have made a bad mistake.
