Bitterness

I'm using raw endive (red & light green) as a base for appetizers. They're kind of bitter. How can I balance/counter the bitterness?

    I often go salty. Anchovies. Olives.

        I like to use thinly cut fruit such as apples, pears, figs or roasted grapes with endive.
