I had a lot of eggplants to use up and came across this idea of raw dehydrated eggplant bacon (http://thevedge.org/2013/05/raw-eggpl...). There are lots of variations of this recipe out there and many add liquid smoke for those who like liquid smoke (not me).
I think it is delicious! I used the long thin japanese eggplants and I did peel them. I had my first BLT in 40 years!!
The eggplants I used were about 6-8" long but I think this would work with any eggplant. I used my dehydrator but a low oven should work too. I dehydrated it at 125˚ for about 18 hrs.
'hardly baconish'....you are right, they def taste like crispy, salty smoky eggplant:) & actually the eggplant flavor really comes thru.
