I had a lot of eggplants to use up and came across this idea of raw dehydrated eggplant bacon (http://thevedge.org/2013/05/raw-eggpl...). There are lots of variations of this recipe out there and many add liquid smoke for those who like liquid smoke (not me).
I think it is delicious! I used the long thin japanese eggplants and I did peel them. I had my first BLT in 40 years!!

Would these be Chinese eggplants? Japanese eggplants are rarely long, usually no more than six or seven inches long.
Did you use the oven or dehydrator? If you use the oven, how long does it take? (I don't have a dehydrator.) I have done something similar under the broiler. I liked the result for what it was but it was hardly baconish.
The eggplants I used were about 6-8" long but I think this would work with any eggplant. I used my dehydrator but a low oven should work too. I dehydrated it at 125˚ for about 18 hrs.
'hardly baconish'....you are right, they def taste like crispy, salty smoky eggplant:) & actually the eggplant flavor really comes thru.
