Light/healthy dining options on the las vegas strip?

Will be in Vegas for 3 days. For lunches, I decided on buffets as it's hard to please a group of 8 picky eaters.

Want a light and healthy option for dinners and under $20 per person as I will be paying for a group of 8.

Any suggestions? Thanks!

    Milos in the Cosmopolitan has a lunch special for $20. I would consider the food there to be light.

        Does "light" mean small portions or low-fat food? Because if it is the latter, maybe you'd want to swap Chipotle for Tacos El Gordo. An authentic Tijuana-style taqueria in the middle of the Strip is a mini-miracle. The adobado tacos are especially delicious. But this is not the place to go for low-cal or low-fat cooking. It's hard to spend more than $10 per person here.

      Will you have a car? Are you looking for on Strip dinners only? If you won't have a car and/or are looking for only Strip dining, you may want to reconsider how much you're looking to spend for dinner. Lunch buffets on the Strip will run you over $20 per person.

        I have been to Vegas several times before and I would have avoided the buffets as I am not a buffet person. But I am showing oversea relatives around the strip and they requested buffets for lunches and light dining for dinners.

        For lunches, I'll be taking them to the Aria, Bellagio, and Caesars. Dinners so far, I have Grimaldi's and Chipotle.

        Just need one more. I want to keep spending to under $75per person per day since I will be paying for 8 people total.

          Not a big fan of Grimaldi's (which was/is Patsy's in NYC)...I find real inconsistency in the end product.....You have to have many, many years of experience to turn out a perfect pie from this kind of oven...and you do not get that kind of person out here in Vegas.
          If you must have pizza, then Five50 at Aria is the best new spot in town. They have a wide range of pizzas by the slice also, which should allow you to control the $$$$ factor.

            Surely there must be better Mexican food in LV than you can get at Chipotle. In my book, Chipotle is a very ordinary corporate Mexican fast food restaurant, and is certainly nothing special.
