I ran across this 1987 piece in the Chicago Tribune by the late Peter Kump when I was searching for some other info. He summed up the basics of the cheese world so neatly in three pages, I wanted to share it here as a primer.

    It's interesting to read the author recommends wrapping cheese in plastic wrap.

      Yes, he did, along with some stated caveats.

      Then in the next paragraph said, "Any plastic wrap, along with a low temperature, inhibits the development of flavor and affects the texture, making the cheese firmer than it normally would be. "

        Yes, I read that too. And, I believe this is an excellent example of why many people get confused by sage advice while seeing countless examples of plastic wrap usage in commercial sales.

        Do most cheeses wrapped in plastic comes with a caveat on the printed label?
