Fatback in Phoenix

No, not the band, but the solid subcutaneous fats near the pig backbone. I can find pork belly in spades but I want to get some true fatback so I can start grinding my own breakfast sausages. Can anybody recommend a reliable source?

    You might try asking at the meat counter in a Sprouts store. They make several types of sausage onsite and I imagine that they have to use fatback themselves.

      You might try the Pork Shop in QC.
      They are a mecca for all things porky.
