  1. You may want to check on the availability. Last time I was there I asked about the dish. I was told it's in between truffle seasons right now, and if they can't get enough late summer (burgundy) or early winter (black) truffles, if the only truffles available are the much more expensive white truffles, then the truffle gohan would likely be cost prohibitive for both the restaurant and the customer.

I may be using the terms wrong. Here's an interesting post with further details on truffles: http://chowhound.chow.com/topics/920740

FWIW, Shunji mentioned that a customer once asked for what I called the "tricolore" truffle gohan with burgundy, black, and white truffles. Too rich for my blood...

The tricolore was probably ordered by our old esteemed colleague Mr. JL.

Ok. No worries just thought I'd throw that out there.

I most likely won't be able to polish a whole one myself.

And besides I think it was created to share among a group.

Guess my request for your contact info was removed. If you want, can you put your email address in your profile or email me? My email is on my blog.

        1. Any details on this dish for the uninitiated? Guessing it's rice with truffles but would love more details.

Haven't had it myself, but basically it's a large serving of (seasoned?) rice with truffles shaved over it. You put some in in your own personal bowl, then mix with accompaniments, egg yolk, uni, ikura, pickled vegetables, etc.

J.L. and Porthos will have to correct if I'm wrong.
