? Something new and wonderful to do with pumpkin?

Got a good idea?

I've been collecting pumpkin recipes for years. I've got recipes for pumpkin butter, pie, soup, cookies, pasta sauce and breads (yeasted and quick). Still, this time of year you just want to surprise the senses and bag your limit of interesting ways to enjoy that tasty squash! ; >

    2. I love it in baked goods, but last year I really got into pumpkin smoothies for breakfast. Coconut milk, pumpkin, yogurt, nutmeg and cinnamon. Really nice way to start a fall morning :)

        That sounds fantastic! Was the pumpkin raw or cooked (steamed)?

          Cooked! I like to bake pumpkin, store in the fridge. You can use organic pumpkin in the can too ( not the pie filling).

      2. Oh I absolutely love pumpkin chili:
        Make a regular ground beef chili but replace about half of the tomato sauce with pumpkin puree. If you're not opposed to beans in chili it goes well with kidney beans.

        The other I recommend is chicken and pumpkin enchiladas.

        For a more boring interpretation pumpkin with a little sage and red pepper flakes is nice as a filling for ravioli.

          1. I found a recipe on line for Pumpkin Cheesecake Muffins and can't wait to try making them. There are a few variations and I'm going to make the one that uses both regular white and brown sugar.

            By the way, can anyone tell me if I'll need to keep these refrigerated because of the cream cheese or will it be ok out on counter a day or two because it's cooked?

            1. Masaman Curry with pumpkin, green beans and meat of choice. The little cans of curry paste and coconut milk. Dinner in 15 min.

              1. I have an enchilada recipe around here somewhere that calls for pureed butternut squash, but I sub pumpkin this time of year. It's really good.

                1. DH made some excellent pumpkin cream cheese frozen yogurt last fall. That's one we will do again.
