Vegan Lemon Bars?

Hello Friends!

I am in search of a great vegan lemon bar recipe. If it was gluten free too, that would be amazing.

I have a sudden craving for these buggers and hope to make a tasty adaptation.

    There are different versions,this one uses silken tofu, use a gf cookie for the base:

    Raw, gluten free, with coconut:


    I made these a while back and loved them! Be sure to soak dates in boiled hot water about 20 min and drain before blending so they are soft

      I often make key lime pies and lemon curd by using egg replacer to omit eggs (Ener-G brand is one I often use).I'm sure you can substitute regular flour with an all-purpose gluten free baking mix as well. Good luck!

        I really love the one in Chloe Coscarelli's new Vegan Desserts recipe--it gets rave reviews across the board from family and friends and strangers--but it doesn't seem to be anywhere but in her book! (And at least 90% of her recipes, she gives you the g/f option.)

          Not gluten-free, but maybe you could adapt with the Bob's Red Mill Gluten-Free baking mix and arrow root instead of cornstarch.
