Too Much Cantaloupe
I have too much cantaloupe.
Are there any really great cantaloupe recipes that "transform" it? I'm interested in things that I can freeze or otherwise store. Lemme know if you have any ideas.
I love to have things like that in my freezer for the winter doldrums! Think about how wonderful a bowl of cold cantaloupe soup would brighten a cold February day! You can either puree and freeze or just freeze it in chunks. If you want a recipe for the soup let me know.
I always stock up on local blueberries, strawberries, corn, tomatoes, etc. Nothing better.
I often use extra fruit to make popsicles. If you have popsicle molds (or just popsicle sticks and paper cups), you can use any combination of puréed fruit, plus some yogurt if you like.
The only warning (from experience)-- think about color if you're combining fruits! No one likes a brown fruit popsicle. Cantaloupe would mix well with anything yellow, orange, red, or white. Nothing purple! You'd have to eat them blindfolded.
