Zuni-style turkey thighs
I absolutely love the Zuni chicken technique and use it often. I'm in the mood for Zuni but instead of a whole chicken I thought I could use a few ginormous turkey thighs in the freezer. I assume this would work just as well. I planned to salt as usual for 2-3 days but have no idea on approximate timing for individual pieces at 475F. Any tips for split poultry product Zuni?
