Corn batter life

I am taking corn bread to a party this weekend.
I would like to complete the mix at home and pour it into the baking pan and then bake it about a hour later.

Question: will it hold that long? Refrigeration is available and we are basically at sea level.

  1. Depends largely on the leavening...listing the ingredients will help with the answer.

    1. It might not be "perfect" but I suspect it will keep for several hours. I often make my cornmeal ahead (with room temp ingredients) and let it sit for a 1/2 to an hour. I like how it does a partial "rise" before baking

      1. Use two zip lock bags, one w/ wet, one w/ dry. Mix when you get there.

          depends on your leavener, but adding the liquid usually activates it, so several hours of "working" before baking may leave you with flatter bread than you want.
