Help! Frosting with heavy cream and sour cream: Does it need to be refrigerated?

lpandey Aug 29, 2013 12:13 PM

Need some advice! I made these whoopie pies for a work function today: http://carenblair.blogspot.com/2012/0...

I refrigerated them overnight, but this morning I took them out and have left them out of the fridge at air conditioned room temperature for about four hours, thinking that it was frosting, so no big deal.

THEN I remembered that there is sour cream and heavy cream in this frosting. Sound I not be serving these? Really don't want to make everyone sick!

My gut says 4 hours in air conditioning is fine (I believe anything left out for over 4 hours can be a risk).

My gut is with chef's gut, however if we are wrong it's your gut that will pay!

That's fine for less than a day. Rose Levy Beranbaum's recipes all have shelf life in and out of the refrigerator which I find very helpful.

Okay, you all are making me feel a bit better about serving them (crossing my fingers!).
