Using Chlorophyll

lamb_da_calculus Aug 25, 2013 11:48 AM

In the French Laundry Cookbook there's a small section about extracting chlorophyll from spinach and other greens in order to color sauces, chlorophyll itself being more or less tasteless but very intense green.

I'm making some right now mostly for novelty's sake, but I'm also wondering if anyone knows of uses besides "add to sauce to make it greener".

Thanks.

I've seen it used in a number of "health food" recipes, added to smoothies or chilled vegetable soups for added nutrition

Unfortunately Chlorophyll does little to nothing for non-plants
