Using Chlorophyll

In the French Laundry Cookbook there's a small section about extracting chlorophyll from spinach and other greens in order to color sauces, chlorophyll itself being more or less tasteless but very intense green.

I'm making some right now mostly for novelty's sake, but I'm also wondering if anyone knows of uses besides "add to sauce to make it greener".
