Does anyone have an easy, but really good sour dough recipe?
Well, you start with some flour and water, and an optional pinch of commercial yeast to help attract the wild stuff, then stir and feed (slowly) over a period of 2-3 weeks until your starter is ready.
The few recipes I have tried call for making the starter a day or two before.maybe this is why my sourdough is never that sour.but I'm not sure I have the patience to feed that thing for two or three weeks :(
I would make a poolish a day or two before, and possibly the actual levain for baking if the starter was already active.
Going from zero to be able to make sourdough will take time. You can cheat by asking a bakery to give you some (or buy it from them).
