Beech mushrooms

I really love mushrooms and recently have been seeking out a few different varieties other than the standard grocery store options. I found a nice pile of beech mushrooms at my local Korean grocery store today and wondered if anyone had any favorite ways to use them (I bought the brown beech). My favorite way to cook mushrooms is simply sauteed with a splash of cooking alcohol. Do these work well for that? I read that they are crunchy which I can't seem to wrap my head around.

  1. I often add them to noodle soups, towards the end so they don't overlook.
