Report: Sbraga Chef's Counter, BBQ Tasting

Took my wife to Sbraga for her birthday dinner. Every dish was wonderful and seemed to build on the previous one with regard to flavor and heat. At the end of the meal, we were presented with a copy of the tasting menu signed by Chef Sbraga. For her birthday, my wife received a complimentary glass of sparkling rose during the meal and a copy of the regular menu signed by all of the waitstaff as well as a card signed by Chef Sbraga. Menu below...

Chilled cucumber and watermelon soup, compressed watermelon

Heirloom tomato salad, avocado, white onion, fried pickles, ranch

BBQ glazed salmon, quinoa, lardons, peas, pea tendrils

Braised chicken legs, smoked corn salad, jalapeño-honey cornbread

Roasted pork belly, smoked pork mac n cheese, fried pig skin, roasted tomato pork jus

Jerked beef brisket, grits, pickled beets

Red velvet cake, smoked strawberry ice cream

    Thanks for the detailed commentary. The signed card is a nice touch. Celebrity chefs are omnipresent these days which is a term along with "foodies" which has become hackneyed. Clearly in this case the chef seems to warrant the adjective.

      He was most definitely there working the line. One of the fun things about the evening was being able to chat with the other chefs as they were preparing dishes.

      On an ironic note, when we left the restaurant, we were looking for a cab. One pulled up right in front in front of the restaurant with passengers in the back. We waited for them to pay and exit the cab...and the man who got out was Michael Solomonov.

        That menu is only available until Thursday. Next week starts August's Chef's Counter, the theme of which I think is Norwegian (taking on Noord?).
