Yellow Mole

Watched Rick Bayless yesterday where he was at a Market in Oaxaca sampling a dish with yellow mole. I have not been exposed to this version, know any places in SD that serves yellow mole in a dish?

      Mole Amarillo, not my favorite. Easiest and simpliest of the moles.

        I think "road trip...Oaxaca" is the best reply I have every gotten on this board. What don't you like about Amarillo? Plantains?

          Mole amarillo is the everyday mole. It doesn't take long to make. For me the flavor is just somewhat flat and lacks the depth and complexity that other moles have. But every cook has her own version so it may be that I just haven't found the version that turns my crank yet.
