Roast Pork Sandwich

Does anyone have a Pork Au Jus recipe or know of a good pre-made one? (I have a tenderloin that will not produce too much liquid)

  1. Gota get some pork bones ribs, shoulder etc, make a stock using standard onion, carrots, celery, thyme, bay leaves. Reduce a portion with wine, etc, S&P you'll have au jus! Use what you need, freeze the rest in portion sizes.

      It's jus, not au jus (which means "on {or with} juice"), and to accompany one or two pork tenderloins, a simpler way is to simmer a half pound of bulk ground pork or ground (mild) sausage with the vegetables and herbs. More surface area in the ground meat releases more flavor, faster. Skim the fat, add wine or beer or apple cider and reduce, tasting until you like it.

      1. Kitchen Basics makes a pork stock. I haven't tried that one specifically, but I was very pleased with their chicken, beef and vegetable stocks.

        1. I made the sandwich last night and what I did was deglaze the dutch oven with chicken stock and white wine...my version of the FAMOUS DiNic roast pork sandwich was very tasty...Thanks everyone for your suggestions
