Caramels at the Chinatown Night Market
We went down last night and sho nuff, Tanis Ling and co have upped the ante for more artisanal and more local stuff in addition to all the delightful gadgets and gizmos (hello, lovely $1.50 fans!).
There are three (!) handmade caramel stands there right now: In The Oven, 1Up and tea lab.
In The Oven is doing vegan candy which uses coconut milk, oil and veg margarine. I nabbed some smoked salt ones and I must say they are delicious. I've had coconut based caramels before that I didn't like at all. These are worthy, even up against butter!
1Up has a variety sampler that has three flavours: seasonal lemon, coconut and beer pretzel. I liked these but didn't love them.
tea lab, now, is a contender. Only one flavor on offer, but what a flavor! Ginger lime. And made that afternoon. The ingredients list ticks all the boxes: sugar, brown sugar, butter, heavy cream, milk, corn syrup, ginger lime peel, lime oil and vanilla extract.
