Whole pig cookery
I am catering a wedding for 100-120 people in late August. The bride and groom want a whole pig roasted as their entree for the wedding ceremony. I work in the industry and know where to get a pig the appropriate size, which is roughly 75lbs. The pig box I was going to use holds a pig only up to 50lbs. Is there a place I can rent a pig box from? Or, is there a way to make a pig box? Would it be better to dig a whole in the ground and cook it over night?
