Whole pig cookery

I am catering a wedding for 100-120 people in late August. The bride and groom want a whole pig roasted as their entree for the wedding ceremony. I work in the industry and know where to get a pig the appropriate size, which is roughly 75lbs. The pig box I was going to use holds a pig only up to 50lbs. Is there a place I can rent a pig box from? Or, is there a way to make a pig box? Would it be better to dig a whole in the ground and cook it over night?

If you need more information please let me know. Thanks!

  1. I don't think I can offer help in finding a bigger pig roast vessel, but I am curious as to where you got access to the 50 Lb pig roast box. I tried to secure rental of a Caja China last year for a party but couldn't find a place renting them out for a weekend.
