We have 3-hour layover at SEA TAC tomorrow - what's our best bet for lunch?

Anything actually edible within the airport?

It is a chain, but as airport food goes, it is more than decent:

We usually eat at Anthony's if we've got time to kill. Try their seasonal dessert/drink specials.

I think Seatac is actually one of the better airports for dining options. You should be fine.

Restaurants are not allowed to charge higher prices at Sea-Tac than they normally charge.

Anthonys is a good choice for the airport.
