I wanted to post a quick message about Madrid Food Tours, a company that does tours around the city in very small groups or private one on one. I didn't know what to expect when I booked with them for a Friday Night tapas crawl but it was an EXCELLENT experience. James, one of the guides, knew all the little streets and good bars to go to. He lives in Spain and is married to a Spaniard woman and his Spanish was excellent. Very good experience. It lasted about 4 and a half hours and was totally worth the money (about 90 euro a person, food and drinks included). Bars and tours change all the time.

Taverna Real (they had excellent vermouth), Taverna La Concha (good anchovies with orange zest, blood sausage, and also the smoked beef), Venecia (for some excellent sherries and cured meats/cheeses), and El Lacon (deslish pork with Pedro Ximenez glaze).
