A cup or two of leftover raspberry juice

I bought a flat of black raspberries. I made juice to make jelly & have about 12 ounces of the juice leftover. Trying to think of something interesting to do with it.

    Sorbet? And eat it all yourself, since it won't make very much.

    Or maybe make black-raspberry-lemonade?

        I'd probably try to thicken and sweeten it, and swirl it through a good quality vanilla ice cream.

          I'd make raspberry curd and serve it with meringue/pavlova, or over vanilla ice cream.

            Make jello. Buy a package of black raspberry or regular raspberry jello. Boil a half cup of the juice with a half cup of water, stir in the jello mix, then add 8oz chilled juice and refrigerate to set. If you had 16 oz you could do it with plain gelatin and sweeten to taste. I do that will all sorts of juice.

                Turn it into a simple syrup to add to drinks it brush on cakes...especially if you use the raspberry jam you made for later cakes.

                  I'd go gin,tonic a little sugar syrup and some fresh mint.
