Smoked chicken stock?

We smoked 4 chickens this weekend over hickory with a seasoning mix mainly of brown sugar and paprika. For fun, I am using the bones to make a stock...

Any suggestions on how to use it?

I live in KY, bonus points for any local ingredients or flavors!

Bought some grits today. I'm almost embarrassed to admit I didn't have any on hand! Thanks for the suggestions.

Use the stock with collards or kale, onions, garlic and chiles for slow cooked greens. You can add any leftover poultry or shrimps on top or during the final cooking of the greens.

                        Perfect. Don't forget the squirrels.

F the squirrels. Let them smoke their own chicken.

That's a great idea! I don't eat pork so miss a lot of dishes that call for that smokey addition. Thanks!
