Smoked chicken stock?

We smoked 4 chickens this weekend over hickory with a seasoning mix mainly of brown sugar and paprika. For fun, I am using the bones to make a stock...

Any suggestions on how to use it?

I live in KY, bonus points for any local ingredients or flavors!

                      Use the stock with collards or kale, onions, garlic and chiles for slow cooked greens. You can add any leftover poultry or shrimps on top or during the final cooking of the greens.

                          Any Bean soup that would normally have Hock, Bacon, Ham or the like.

                              Cheers, If you like a little heat dry Smoked Chipotles Chilis(Meco vari. esp.) do good things for Green and Beans as well.
