Vegan huitlacoche dishes?

How many Diana Kennedy books can one read before the huitlacoche obsession becomes a problem? I've never tried it. I see that a few places in the area serve it in various dishes. Which are your favorites? Which might be prepared to suit a vegan? Can one buy the fungus in local markets?

  1. I've seen it on rare occasions at farmers markets. Firme had some in 2006, they were at the San Leandro market on Wednesday evenings last year.

        I think it can show up any time there's corn. It was mid-September when Firme had it.
