Looking for more ways to use fried herbs.

I've just recently discovered the joy of 'fried herbs'. I've been using them on my poached eggs in the morning (fried sage, oregano and parsley, picked fresh and fried in bacon fat) or just traditionally used as garnish in persian dishes (my boyfriend's favorite is fried mint on a traditional eggplant/kashk dip).

I'm wondering if there was other uses, other cultures, favorite ways to use fried herbs? I'm looking to expand my world here.
