ISO this recipe: "short cut spanakopita"

edinaeats Jun 14, 2013 10:30 AM

What I know- it has 6 eggs, a bit of flour, cottage cheese, feta and spinach. Baked in a 9x13 pan.

I know I’m missing something. Anyone have this recipe?

Thanks!

If you haven't located your recipe by now, this is one I've made:

It is good. Uses a spring-form pan, not 9x13. Shortcuts here are 1) cheater phyllo topping & 2) advance prep, freezing, then baking when ready to serve. (But baking from frozen takes longer than indicated.)

What I'm seeing is a Bisquick "Impossibler Pie" variation, using the flour and eggs instead of filo to make a crust. You could google it or try Bisquick's site.

There are shortcut versions that use wheat tortillas or frozen puff pastry instead of filo. I haven't tried making any of them.

            You missing the fillo?
