Suggestions for healthy / picky eater in Orlando

I will be in Orlando in mid July with my mother who is a notoriously picky eater. She is extremely "fat phobic" meaning she is terrified of butter, oil, etc. As such, this makes dining out particularly difficult! To further complicate things, she will not venture into ethnic cuisines, so Thai, Vietnamese, Japanese (including sushi, sadly), Indian, etc. is all off the table. Any ideas? My husband and I (self proclaimed foodies) were just in Orlando a few months ago and loved Lac Viet, Pio Pio, etc. It's too bad I can't take my mother. If it's any help, price isn't really an object and there are no particular dietary restrictions (i.e. gluten free, etc.)

Also, we are already familiar with Seasons 52 as there is a location near her. I'd rather go somewhere new if possible.

      Sara, There's a sweet little place called Fresh in Hannibal Square in Winter Park. Much of the food is healthful, and it's good. I had a salmon dish last night and my husband had a Vietnamese-style noodle bowl. Both were good. www.freshcafe-wp.com
