Freezing veggies

Hey guys! Last night I made my veggie "stew"-cut up potatoes, carrots, zucchini, onions and tomatoes, simmered in olive oil and its own juices, and added pre-cooked brown rice at the end. I made WAY too much for me to eat-can I freeze the leftovers? Will it re-heat well?

    rice AND potatoes? lol.

    the potatoes will be mealy and kinda disintegrate after freezing/thawing, so you may want to remove them prior, but everything else should be fine.

      Agree that texture of potatoes might be a bit mushy... but that might depend on what kind you used. If texture isn't a major concern, the flavor should be just fine after freezing/thawing.

        I wouldn't worry too much about the reheating. The rice and potatoes are likely going to be a benefit as freezing veggies in any liquid can lead to breakdown. The potatoes and rice aren't going to be any worse off. The onions and zucchini are going to be the re-heat villains as they will continue to release water.
