Dairy Free Baked Rice Pudding

My Dad is not allowed to have any dairy. He is quite ill and loves a baked rice pudding which must be quite dry not too creamy. Can I replace the milk in my recipe for coconut milk, and bake in a bain marie with similar results? Or does anyone have a good recipe for a baked rice pudding that is not too creamy in texture. He is allowed to eat eggs which I usually add to my rice pudding.

  1. You will probably get more responses on this if you post it in Home Cooking, but I would say yes, you can sub coconut milk for cream/milk in this application without any trouble.

    1. It should be really good made with coconut milk... I put coconut milk into a bread pudding when we were out of milk and I was just dying for some, and it tasted wonderful.

          YES coconut milk, vanilla soy milk, and almond milk all work.

          I find that if I use brown rice, it's less creamy than white, but that could be my imagination!

            I`m going to use the Arborio rice along with coconut milk and hope it all turns out. Brown rice would displease him too healthy!
