Pressure Frying Recipes???


I just got myself a Pressure Magic, one of the few pressure cookers approved for pressure frying.

If there's anyone out there who's experienced using one of these, any favorite fry recipes and tips would be very welcome.

  1. Hi, A number of years ago some friends made chicken breasts for us in a similar device. They seemed to be pleased with the results. My memory is of severely overcooked chicken. Please post about your experiences with the Pressure Magic, and don't overcook stuff!

      It's a forum dedicated to duplicated Kentucky Fried Chicken's original 11 herbs and spices. Many of the fried chicken recipes you will find on there call for a pressure fryer.

      1. I have used fagors pressure magic for about 15 years. Mine came with a cook book that had 10 pages of pressure frying recipes. You may be able to purchase one from the company.

        I have only used it for chicken and their recipe turned out great.

        1. Try tube style refrigerated biscut dough, either regular or the flakey layer type.

          1. Commercially, I believe that's "Broasting."


            When googling I saw recipes.

            We used to have a bar/diner near us that had broasted chicken. Loved it. Crispy crust and moist chicken. Yes, please do report back. C

              You are correct, although the true broaster-type cookers go anywhere from $2,500 to $10,000, as opposed to $250 for a Pressure Magic.

              It was my love (and dirty, dirty fetish) for Roadhouse-style broasted chicken that put me on the search to duplicate it at home.

              The PM has arrived, and I await only the manual/cookbook to make sure everything is safe. I expect a broasted Monte Cristo and popcorn shrimp will follow the chicken in short order. And I'll report.

                Have you reported this on another thread or have you not done your testing yet and you're still waiting to collect the information to do a report here?
